Sweet and Savory: The New Pastry Chef Generation

In a serious restaurant, the last course is expected to uphold the standards set by all the preceding ones. This means a pastry chef who can deliver a fabulously, deliciously, unique dessert, one that combines sweet and savory, finding a balance where the lines between them blur. Doing this makes the entire meal experience complete.

Traditionally, Americans have a love-hate relationship with sweets. Most everyone loves the occasional hot-fudge sundae; however you are probably also fully aware that on some level, it's just too sweet, too rich, too much. New-wave pastry chefs tend to use sugar very sparingly. Instead of sugary treats, they engage your mind and imagination with flavors, thereby eliminating the guilt factor of dessert.

Make Taste Your Desserts Goal

When it comes right down to it, the first and foremost goal of any dessert dish should be taste. But once you've mastered that, your next goal should be to make the customer think, "How the heck did she do that?" The way many pastry chef can accomplish this now has a lot to do with the set-up of today's kitchens. Rather than having a pastry station, a meat station, etc., many restaurants have gone to interchangeable cooking areas instead. This allows pastry chefs to utilize a larger variety of ingredients, thus complimenting the sweet and savory blends of the meal.

So if you're thinking a pastry chef is nothing but a rolling pin and some dough, think again. Today's pastry chefs are creative, ingenious, and full of flavor. And they create desserts that are truly out of this world. Becoming a pastry chef will involve both technical training and hands-on experience. With so many excellent schools, programs, and restaurants available, your selections are as near or as far as you want them to be.
